The reason my sweet potato white inside

Do you often wonder what is causing white spots on sweet potato skin? The white specks can be found in small clusters on the skin of sweet potato. In some areas of the sweet potato skin, the white spots form a ring that is filled with water. The water is caused by the presence of amylase. The presence of amylase is responsible for the removal of amylase from the starch.

Sweet potatoes have high levels of amylase in them. The white spots are formed only when amylase reacts with the starch. The white deposits are harmless to our health. However, with repeated exposure to sun, heat, air-conditioning, improper handling, improper cooking methods, over consumption of potatoes and various other reasons, the white spots on sweet potato develop into a health hazard.

The reason why is my sweet potato white inside is because the cell walls of sweet potato are damaged. They get damaged because of too much heat, continuous exposure to sunlight and improper cooking methods. Over consumption of white sweet potato will cause the cell walls of sweet potato to break down. Once the cell walls break down, the starch inside the cell starts amylosing.

The other reason why is my sweet potato white is because the skin of sweet potato is so hard. When the outer coating of sweet potato gets overcooked, the white part of the skin starts to turn yellow. You will notice that sometimes the sweet potato flesh comes into contact with the yellowed flesh. This is because the yellowed part of the skin is rich in beta carotene. The presence of beta carotene is what gives the exterior of sweet potato its yellow color.

The other reason why is my sweet potato white inside is because the outer coating of this particular vegetable is very resistant to starchy foods. Sweet potato is well known to be a diet food. But sometimes it gets too boring and people tend to eat too much sweet potato, which results to overeating. The presence of fiber inside the vegetable is what helps the vegetable to maintain a balanced weight. Too much intake of white stuff may make you feel bloated, but excessive intake of white stuff may also make you feel hungry.

The next time you go to the grocery store, look for white sweet potatoes. Remove the yellowed skin and cut them in half. Do this if you want to have a tastier product. Then, take all the flesh and smash it using a fork. Add some butter and salt to taste. In the mean time, clean out all the lumps made by the crushing of the flesh.

After smashing the sweet potato chunks, pour out the white liquid that remained in the center of the root vegetables. Rinse the root vegetables under running water to remove all the white liquid and wash them under cold water. Fill the small pail with cold water and add a few pebbles to keep the water filled and the pebbles to keep the dirt out. Now, bring the pot to a boil over medium heat. Drop in the sweet potato chunks and let them cook thoroughly. When the sweet potato is almost done, sprinkle a little lemon juice and cover the pot tightly.

The sweet potato is cooked when the liquid reaches about 160 degrees Fahrenheit. You can serve the mashed root vegetables with a sauce of cream, sugar, and butter.
